Frustrated with the lack of concern around environmental issues, junior senator Gaylord Nelson of Wisconsin came up with the idea for Earth Day. They're aware of human issues, both here and abroad, and that somehow drove them all into the position that food was a place where they would be advocating for change through their passion, their life work, and through wanting to celebrate not only communities, but also by becoming activists for changing the way we eat. That felt really good.
